Christmas Roca
Another family favorite that we only make during the holidays because it is hard to stop eating this easy mock "Almond Roca".
  • 24 squares of unsalted saltines
  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 tsp. vanilla
  • 1 pkg. mile chocolate chips
  • 3/4 cup finely ground skinned almonds

Grease a 13" x 9" cake pan. Arrange crackers face up on the bottom.

Melt butter and sugar over medium heat, bring to a boil and boil for 3 minutes, stirring constantly. Remove from heat and add vanilla. Pour mixture over the crackers and spread over all of the crackers. Rearrange crackers that move with a fork. Be careful, it's hot!

Bake 5 minutes at 375°, remove from oven and cool 10 minutes on a rack. Then sprinkle the chocolate chips over all and let stand 5-10 minutes before spreading it smooth. Sprinkle almonds on top and score before completely cooling.
