- 1 9" pie crust
(you can use the pre-made pie crusts that come in a roll)
- 1/4
cup butter
- 1
sweet Vidalia or Walla Walla onion sliced thin
- 1
large leek sliced thin
- 2
shallots sliced thin
- 1
tsp. sugar
- 1/2
tsp. ntumeg
- 1/2
tsp pepper
- 3
ox. cream cheese
- 3/4
cup EACH shredded swiss cheese, shredded Pepper Jack
- 3
egges lighty leaten
- 2/3
whipping cream
Preheat
oven to 375°. Cook
onions, sugar, nutmeg, pepper and 3/4 tsp. salt until tender. Stir in cream cheese
until melted and then add swiss and pepper jack. In
a large bowl combine eggs & cream and then gradually stir in onion mixture.
Pour in pie shell and bake uncovered 40 minutes. Cool 15-20 minutes before serving. | |
